All the recipes I read say to put in fridge to let the fat harden and then skim it and toss it. Do we do that with Keto? Is it a good fat?

Nooooo, Don’t throw the “fat” away…That gelatinous looking goop is so good for you…If you are planning on drinking it just heat reheat it or you can use it in sauces and such…
I used to throw it away because it’s tough to get through a cup with lots of fat IMHO. But now I skim most of it off and use it for cooking, like stir-fry. Fajitas with beef fat? Yum!!
I always mix it in but I’ve been wondering about this as well, especially if you’re fasting. I know bone broth is generally considered ok while fasting but with the fat or without?
According to Jason Fung MD, fat does not raise insulin levels and is thus fine to take in during a fast. In fact, it might be the secret to lots of successful fasting… Broth/bouillon/tea also not affecting insulin levels are apparently fine too.
In order to maximize collagen uptake and integration from bone broth we need to have sufficient Vit. C circulating and there is liposomal, fat-based Vit. C liquid which is easy-peasy to take during a fast w/ broth.
One clarification. If your fasting goal is autophagy, Dr. Fung advises against taking in fat during a fast as there’s no definitive science yet on whether fat inhibits autophagy.
