I love the idea of summer sausage which has a perfect fat ratio and does not need refrigeration but all the types I have tried are too spicy for me. I really don’t want to make my own. Any suggestions on where I can find (or have made) some summer sausage without all the spices or smoke (just the salt to cure it).
