According to Nicholas Christakis, developing the ability to tolerate dairy was due to it giving you an evolutionary advantage over someone didn’t - so your genes got passed on more often. He mentioned about half the world’s population cannot tolerate dairy.

The obvious advantage is calories but another advantage he mentioned was access to the clean water.
