Bitter taste when baking with Truvia

I only had truvia at home and put it in a mug cake and it came out bitter. I know it’s meant for hot beverages (and maybe cold) but it’s only Stevia and erythritol. I only used one packet (3 grams i think), so I don’t think I over did it, not too sweet at all. Anyone else had this happen?

Well, Truvia contains stevia (bleccchhhh!!), so there’s your problem! :rofl:

Don’t forget, cold suppresses flavour and heat boosts it, so if it’s not a great flavour in the first place, you’ll notice it more in warm as opposed to cold foods.

I’ve only ever used pure erythritol or xylitol in anything keto-cakey.

The only sweetener I use now is Café Al Fresco caramel syrup. I use it on my lupin flour pancakes once a week, and in my coffee once a day. I can’t eat Stevia/Erythritol anymore. The taste just makes me feel sick.

I need to get some pure erythritol then. No xylitol, it increases the blood glucose levels a lot! Thanks!

Are you sure it was the Truvia?

It could have been, but I had some issues in a couple of mug cakes recently that turned out to be some of the extracts that I was using. I got this bitter whang that I couldn’t place. Turned out to be lemon extract. I love real lemons, real lemon juice and real lemon zest. But something about the little bottle of extract is extremely sharp and bitter to me. So I quite using that and found myself liking those particular mug cakes a lot better.
