Bitter gourd is plentiful here in Nepal - are they a good choice if want to keep my carbs to the very minimum possible?

Mmmm, bitter gourd with ghee and spices is such a unique taste and a healthy traditional food for detoxification - I have only eaten it two times in my life, but found it very tasty as a little side dish with other food. It’s an above-ground veg - seems like a smart & ideal choice to eat a couple times a week to maximize digestion and palate. I don’t know what the carb count on them is specifically, but they are an ancient medicine when cooked the right way :smiley:

I love biiter melon and grow it in Georgia. It has a pretty long growing season. I cook it in stirfries, Indian and Filipino dishes and I made 4 different kinds of pickles once. My pigs like it only when it is over ripe and yellow.
