FWIW… I had a hankerin’ for a burger today. Just so happened that I found some real nice ground chuck for $2.49/lb at a little local mom-n-pop store near here. So… I made some. Super simple. Weighed out 1/2 pound of ground (each), gently, no excess mashing or squishing, formed them into nice thick burger patties, seasoned with a little salt, pepper, garlic powder and onion powder, and popped those babies on the grill. I gave 'em a little Worcestershire sauce over top while they were grilling. Cooked them to 160 degrees internal temperature (yes, I have a thermometer and I know how to use it. I despise hockey puck hamburgers.)
Some of the best, juiciest burgers I’ve had in a while! Seriously good eats! (No egg or anything else required as a binder. Just meat, this was 80/20. It worked.) My wife made some cauliflower (potato-like) salad she’s been playing with that was really good to go with. (I don’t think she has a recipe, she’s throwin’ it together, and I haven’t watched.)
I say this all because I know from past experience that just buying a few burgers in a package in the frozen section of the store wouldn’t have come close to the tender, juicy, tasty treat that I had for supper tonight. And what I did was like a whole 2 minutes worth of work more than getting some frozen patties out of a box.
I suspect it could be done just as well with other kinds of meat, too, though I haven’t tried. I know that my favorite homemade sausages so far have been a mix of beef and turkey, don’t know exactly why. Might even be able to do some burgers with some kind of fish, not sure. I’ve seen them in the store.
