(Seriously, though, I just had a ham covered in the butcher’s patented blend of spices—but he won’t share what it is, though I could taste lots of garlic and some coriander, at least. Yum!)

Usually, when I’ve smoked pork or beef, I only used salt. After I recently got my SV I decided that I wanted to try a couple racks of ribs and use a rub. The only one I found that didn’t have sugar was Bad Byrons Butt Rub. I think I picked it up at Walmart but I did see a larger container at Sam’s later. It wasn’t total heaven but it wasn’t half bad either, meaning I won’t ditch it and will probably use it up, but after that it’s a toss up whether I’ll buy it again.

Have heard tell of Meathead’s Memphis Dust made with Swerve in place of the white sugar and Sukrin Gold in place of the brown.

Have also heard tell of using it without sugar at all, but that’s mostly in the context of doing something over a live fire, direct, like a whole hog on a spit.

I’m tempted to try some pork belly or country ribs with the no-sugar version before springing for two versions of arty sweeteners that I don’t know how they perform.

This stuff is AMAZING! I buy it at Costco:

I use it on pork belly - I score it lightly and bake for 30 minutes in a cast iron (a la Zorn’s recommendation) and it’s perfect.

I found a rib rub I like on Pinterest & use it on pork. I make a batch & put in a jar to use.

2 Tbsp Paprika
1 Tbsp Garlic Powder
1 Tbsp Salt
½ Tbsp Pepper
½ Tbsp Ground Ginger
½ Tbsp Onion Powder
¼ Tbsp Chili powder
