Ok everyone, besides pork rinds, what are your best “crunchy” potato chip substitutes?

Trader Joe’s offers fried okra and fried broccoli in small bags for 1.99. Maybe not deep fried but air fried. Very crunchy.

Coconut chips! Trader Joe’s sells unsalted ones, and I found some Thai ones on Amazon that are very tasty with salt.

Cheese Crisps are easy to make in the microwave

I can turn a 12-slice package of cheese into cheese crisps in less than 10 minutes (4 batches; 3 slices per batch; 2 minutes per batch). You can use silicon cupcake molds, but I find the 3-well and 6-well silicon trays so much easier to load and unload. I’ve created crisps with sliced cheeses, sliced off from blocks, and shredded. They all work.

But you really need the silicon molds to keep their shape and texture consistent. I used to make them on parchment paper or a silicon mat, and they tend to spread all over when the cheese gets molten.

Parmesan cheese whisps. You can buy them at Costco (at least here in Canada!).

Do you live near a Costco? They have fried Shitake Mushroom Crisps. I know it sounds odd, but they taste almost exactly like Carrs Water Crackers. I eat them with cheese. 3 net carbs a serving.

I agree re: Cheese Crisps. Sam;s club and Costco carry their own storebrand if you’re not inclined to make your own. Sometimes I eat them topped with peanut butter or fresh salsa.
