Beef suet bad?

Bought 4 lbs of suet 4 days ago stored it in a bag in cupboard. I opened the bag today and a very strong odor came out. Not sure if it’s bad or not? Anyone know how to tell?

Hmmm - I don’t know but a strong odor probably means something’s going bad. I store suet in the freezer. It’s not pure fat - lots of water and protein in the mix - so I would think that it could definitely go off fairly quickly.
(There’s a group of folks that do something called “high” meat, which is basically meat left to rot/ferment. It doesn’t seem very appealing to me so I don’t know much about it, but there are supposed to be health benefits, so I guess you could look into that?)

I’m going to agree with @Madeleine. It sounds off. I also store my beef fat either in the freezer or uncovered and exposed to circulating air in the refrigerator. Beef fat has no odor and my understanding is that suet, if anything, would have less.

Awesome thanks I’ll throw it away. I’m trying to hit a 2:1 fat to protein ratio so I’m doing my best to get my fat in. Especially after thanksgiving when I have tons if lean lean turkey meat.

Side note I just got censored off the face book zero carb group for daring to mention ratios

Some of those are so dogmatic. “Just eat steak!!! Don’t worry. Steak to satiety cures everything! Talking about anything else is stupid and confuses newbies.”

2:1 is how I eat. It took me ages to nail down a good way to cook fat. I may do a picture thread later this week or maybe even a video describing it since I don’t think I’ve heard of anyone else doing it my way and I find all other ways of cooking it sort of terrible. Honestly, I’d taken to eating it raw as the best of the bad lot until I sorted it out.

It’s ridiculous and cult like. That group is single handedly why it took me 2 years to start into keto. Because I hate doing things because some extreme nut jobs say its good

I’d love to see how. I was gonna use the suet and for like 1 lb of ground beef mix in half pound of suet and make burgers that way. But now it’s bad haha.

Another question for you. So I’m not gonna go clean carnivore. I am gonna use spices and have coffee and creamer and even berries. But very limited. And more pure carnivore for the first month just to see. Question I have is I wont gove up coffee. Usually I make coffee with tbsp or heavy cream tbsp of mct oil and some monkfruit. I was thinking of instead of using monkfruit or articlficial sweeteners since they are known to disrupt bowels. Matbe just 2 g of sugar. I’m still gonna be way way way under my 20g for ketosis. What are your thougjts

You might be able to make tallow out of it, since you’d have to boil it for a while, and you’ll drain and strain it.

That’s pretty easy to do. A one-to-one ratio of fat to protein by weight is 9 / 4 = 2.25 : 1 by calories, so it’s not really that much fat.

I think he means 2:1 fat:protein in grams which is over 80% fat calories. It’s basically keto carnivory. A fair number of carnivores do it. It’s pretty much how I eat.

@Chris_Kornelsen I’m going to answer your questions but it’ll have to wait until the morning. I’ve got a terrible cold and am a bit too headachey for longer posts atm.

I strongly doubt that’s what he means, because it works out to a low protein:energy ratio, and he’s all about getting that up as high as possible.

ETA: Unless you clearly heard him say the words “by weight,” in which case I am completely confused. I think I’m giving up on Ted Naiman anyway, I suspect he’s at the point of letting his enthusiasm run far ahead of the data.

I did mean by weight. But what is your apprehension with weight? I’m gonna do anywhere from 1.5:1 or 2:1 as I do wanna be in ketosis. At least until I figure out what messes with my bowels

@Chris_Kornelsen I was having bad bowel issues the whole first two years on keto. Nothing helped and I tried so many things. 2:1 fat:protein is fixing me. I’ll go into more tomorrow.

Oh, Ted Naiman is featuring in another thread, sorry, and I somehow got it through my head that it was he recommending the 2:1::fat:protein ratio. He’s far more likely to recommend 2:1 protein to fat by weight.

In any case 2:1::fat:protein by weight works out to 81%/19% by calories, which seems awfully low in protein.

Naiman’s Protein:Energy ratio schtick recommends at least 1:1 by weight (69% fat/31% protein by calories), or even more protein. Two to one protein to fat by weight would be 47% protein to 53% fat by calories) That’s a ratio Dr. Naiman would recommend!

Your mistake was storing it in the Fridge. It has to be used or frozen the day you get it. I spread the pieces out on a cookie sheet to freeze into separate pieces then bag when frozen.

What you’ve.got now is pet.food.

If its a solid piece (not grated) you may be able to slice off the outside layer & salvage the rest. If smells ok but Still not sure then id suggest cooking down & straining for tallow.
