Beef liver

I have heard over and over again to eat liver because its so nutrient dense, and after devouring 1/2 a pound of it I discovered that it may have some carbohydrates. I am finding contradicting information online about it. Some sites say it has no carbs while others say as high as 5 grams per 3 oz. Anyone here know the truth?

I suspect it could be either. The liver stores glycogen. If the animal was well fed prior to slaughter the liver ought to have a fair amount of glycogen in it. But I think it’s more typical that they are fasted during transport to slaughter.

I hope that doesn’t stop you from eating it. Liver is incredibly nutritious. Some ZC foods have carbs. It’s ok to eat them anyway for their high nutritional density. Oysters and crab are other examples of this.

I am looking through my keto notes from 2 yrs ago currently to get my macros right - under protein, my note says:

100 gms liver = 20.36 gms protein (contains carbs)

[there must be a fair bit of liquid in it as well - so, besides protein, most of it is probably blood? more blood than carbs? Blood, I think, contains protein as well. We eat dried yak blood sausages here.]

That is fantastic that you eat yak blood sausage. My guess the yak is free range grass fed too. Super nutrition!!
