Following this recipe
I changed the dry marinade to Cumin, Juniper, Caraway, Smoked birds eye chillis and Cacao powder. Cooked it for 24 hours then reduced the bag juices in a pan and added Butter and Red wine to make a chocolate beurre rouge sauce.
Finished off with a Fennel Salad.
