Was lucky enough to get into a Restaurant Depot today, and I was wandering Paradise (the meat section of the store), I came across “Beef Bacon”. I had never heard of it before. Has anyone tried it? I was tempted to buy it, but opted for the regular bacon so I could stay in my budget. I am going to look for a more reasonbly sized package (they were in 5lb boxes) and give it a try.
Beef Bacon?
I tried beef bacon at a kosher deli. It’s perfectly fine, but I still vastly prefer normal bacon.
It is very beefy. Pastrami comes from the same part but usually cured with different flavors. If you want a smokey, chewier piece of pastrami then you will probably like it.
I heard Carl talking about making beef bacon on one of the podcasts… so I thought I would give it a go… I went to a local butcher shop to get beef belly, but they didn’t have any… so he suggests using chuck ribs… cut the meat off of the ribs, cure the meat and you have beef bacon…
so I did…
I salted the meat using Morton’s Sugar Cure, put it in the fridge for 10 days… then cut it in to slabs for the freezer…

I like that you said NORMAL bacon, REAL bacon is also good. Even being a HUGE fan of beef, pork won the bacon fight.
