Baking powder

I have a dilemma… I make keto mug cake from time to time, the ruled.me recipe. At one point my box of baking powder finished and started using another one, same brand. The problem is that the cake had a horrible taste. I tried using less, the taste was not so bad, although still there, but the cake didn’t rise so much. So I am confused, is the new box bad? Should I get another one? Or just reduce the amount of baking powder ?

add more salt and sweetner and fat too beat the calcuim type taste

I’m under the impression baking powder is a mix of ingredients, mainly rice flour. I always subsititute the recipe with 1/2 bicarb soda and 1/2 cream of tartar. Everything rises well for me. Did your cake recipe have any eggs in it? I can’t get a mug cake to rise without them.

The recipe is 1 egg, 2 tablespoons of butter, 2 tablespoons of cocoa, 2 tablespoons of almond flour, 1/4 teaspoons vanilla extract, 1/2 teaspoons baking powder. I used the same recipe everytime, the only change was the new can of baking powder.

Baking powder can get old. My mug recipe includes a bit of vinegar in the recipe too.

My new weakness chocolate 90 sec. In a mug
1T Olive oil or melted butter
1T cocoa extra dark powder
1T Stevia for baking
1/4 t each vinegar and baking powder
Large egg
Beat with fork and micro 90 seconds.
Let cool
1.6 carbs

What exactly is Stevia for baking?
I made a mug one day and it turned out awful, not sweet at all. I used a really fluffy Stevia that had the texture of splenda and found out later it had maltodextrin in it also. Then the other day I tried making almond coconut pancakes and they tasted like a yucky omelette.
Thanks for the recipe, I will try again.

It was in a container. Truvia Stevia


I got a small container because I don’t like Stevia. Thought the chocolate would cover it. Turns out it’s mostly erythritol. Mostly tastes like very dark chocolate. Mix thoroughly.
