Bacon Jam!

Dice 8 oz high fat bacon. Sautee for 8 mins, until browned. Add 2/3 c diced yellow onion. Cook til translucent, about 5 mins. Add 1/2 c chopped tomatoes, 1/2 c broth and 1 T sweetener (optional but gives it the sweet/salty thing) Cook until liquid cooks mostly out (it will still be “wet” from bacon fat) about 30 mins. Let cool. Serve on brie or with ricotta or on a cheesecrisp or keto bread. Or you know, eat with a spoon.

Kim you are a star! I’d forgotten about Bacon Jam, you can buy it in jars here in the UK, but it’s full of sugar. There was a recipe from a popular steak restaurant earlier this year and I adapted it for Low Carb. I’ve got some bacon that needs eating up so will make it again this afternoon. Chorizo Jam is good too.

250g Diced streaky bacon
1 small Onion, Chopped
2 cloves of garlic Garlic, crushed

Heat some oil in a pan over medium heat & cook the above until bacon is golden

Then add the following to the pan
;
1 teaspoon crushed coriander seeds
1 teaspoon smoked paprika
2 tablespoons of Sherry or Cider vinegar
3 Tablespoons of tomato puree
1 Tablespoon of sweetener
2 Bay leaves

Cook this over a low heat for 30 minutes. I stirred & added a splash of water now and then to stop it sticking. Remove the bay leaves before serving or decanting into a jar.

Going to make a double batch this afternoon. Yum
