Smoked some pork belly yesterday

And marinated some thinly sliced roast for a batch of sugar-free, weird ingredient-free beef jerky to take to Houston a week from Tuesday (if it lasts that long LOL).

Four trays ready to dehydrate 4-6 hrs:

Hey, that’s not “boring” Keto! :joy:

I need to do a pork belly again. But the one I see at the store is like the size of a car door. I need to find smaller offerings. LOL Can you share how you cooked it, and in what?

Also I make my own beef jerky too. It’s delicious.

That’s a thought, I have a food dehydrator but have only ever used it for herbs and citrus fruits.

I LOVE mine for herbs. I just started a few months ago buying fresh chives for cheap at store and chopping and drying them myself. Ends up costing 1/4 what I would pay for a spice jar of them and they are fresher and more flavorful too. Did the same with rosemary. Grow my own basil tho and dry that too.

I’m about to make another batch of my dried minced vidalia onions. They are like little pieces of candy when dried, so delicious in everything, especially cold salads, dips, and deviled eggs. I make a bunch of jars to get me through winter to next April when Georgia begins shipping the new crops again. :dancer: Hi my name is Juju and I’m a vidaliaholic.

I find the small strips of pork belly at Walmart. Unfortunately, my recipe is at home and I am in Houston for 3-1/2 weeks working a shutdown at a chemcial plant (6 12-hr shifts with Sunday off). I will post it when I get home. If you don’t have a smoker you can always cook them in the oven. They are coated in BBQ sauce at the end and you can use SF BBQ or skip it altogether. I have tasted them before the sauce is added and they are delicious.

I had a bumper crop of peppers this year, both sweet and hot:

I pickled a quart jar of jalapeños but still had all these to do something with. So I sliced them and dehydrated them and ground into powder with my spice grinder.

I made a jar out of my sweet peppers and a jar of hot peppers.

Making me hungry! I’ll visit korean bbq places often and order the brisket plain. stay away from the salad dressing tho :joy:

Breakfast yesterday. Putting this here to remind myself that even when there’s “nothing to eat”…. usually it’s possible to rustle up something keto! I’ve come to realise “nothing to eat” is often a mindset for me, rather than a fact.

I never say I don’t have anything to eat as it never happens :slight_smile:
We always have enough food for months - not keto, though. I only have carnivore food for, like, a week or two at any moment (but I would survive for months without anything else).
But I know it’s not enough to have some food for hungry me. I am not very choosy (as far as it’s some nice low-carb food and it has enough fat. I am fine with processed things but it can’t be overly much. one small sausage is fine) but I do want variety. I can totally feel starving and refuse to eat my usual meat as it’s boring. So I have supplies. A variety of nice food whenever I need it.
I can’t do what most people can do though, not having anything proper (it’s mostly normal meat to me) for a whole meal (I don’t really do tiny meals). I can’t just eat eggs, dairy and processed things under normal circumstances in that quantities. Fat fast day is the big exception as it has very little food and it’s mostly fat. I don’t need to eat much processed meat to get the macros.

I have something unusual now. I braved pork ribs again. I loved it every Christmas as a kid and later I got disappointed once. But I trusted my childhood memories… And now that it went on a sale, I remembered. It was a success this time. But I don’t need much so I don’t overeat… Wow.

It was a lunch plan and I ate totally differently and it’s not a pretty photo but it’s good at showing how I eat nowadays (without my extra, carbier things but I usually have a negligible amount. it’s usually fruit as usual)! Lean pork, fattier pork (okay, usually not THIS fatty :D), processed pork, some egg, some dairy but not much! This mostly meat seems to solve my overeating problem that I never could get rid of on keto. As without mostly meat, I inevitably overeat fat. And it took a loooong time to limit my non-meat consumption. But I am there now :slight_smile:
