Some of the usual nonsense regarding saturated fat, but a good overview nonetheless.
I’ve found I really enjoy eating chicken liver when sauteed with onions and garlic with a little dijon and white wine. YUM!
I love oxtail, but it got so expensive! Also love liver, never learned to like kidneys, would like to learn how to cook tripe, brains, and pigs’ knuckles.
