Anybody tried "ruby chocolate"?
Yes! From what I remember, it tasted a little bit like raspberry flavoured white chocolate, same mouthfeel too. Unfortunately sugar is the main ingredient, so it’s a keto no-go I’m afraid.
Ruby chocolate ingredients
Sugar 35.5%, cocoa butter 29.5%, skimmed milk powder, whole milk powder, cocoa mass 4.5%, emulsifier; soya lecithin, citric acid, natural vanilla flavouring.

I have some cocoa butter, and if I find a good raspberry extract I might try to temper some chocolate sous-vide and post a ‘keto ruby chocolate’ recipe, unless someone else wants to try first I’ve seen commercially sold bars with erythritol, so that’d work.

Is the raw powder available to the public? There’s a health food market down the street that will open any of their products in the store and let you taste them free of charge. If they get this stuff in (they’re pretty high-end), I’m gonna show up with a spoon.
I don’t believe so (yet?). Callebaut are the sole manufacturer and only sell it in callet form.

Not only does Trader Joe’s have ruby chocolate chips (limited time, while supplies last), they opened a bag for me to try (I’ll try anything once) and then gave me the bag for free.
I can say, definitively, that they taste of…berry. White chocolate with berry. I’m not saying what kind of berry, but it’s a good berry, like a strawberry shaking hands with a raspberry. Like that. Frankly, I think actual berries swirled into a good white chocolate would be better, but…
At least they’re made with zero vegetable oils.
