Was all set to buy a cold smoker… although the cost and space were dragging on me a little. Then I stumbled across this video on Souse Vide Everything:
…and in the end, they all felt like the smoke gun (at least for Pork Tenderloins) was the best option “over” an actual cold smoker, or no smoking at all. Interesting. So I went and found the Breville Smoking Gun on Ebay, for only $59…
Its funny though… I have read several times “wont replace an actual cold smoker”… Yet the thing gets super great reviews, and a lot of people seem to have “replaced cold smokers with them” ? In what ways will this device “not replace a cold smoker” ?
I want to use one in conjunction with Souse Vide. Anybody doing this ? What would be the advantages of a cold smoker, over a smoking gun ?
