How does this one work? Does it just keep water at a certain temp?

The machine keeps water temperature constant as well as circulates the water to ensure there are no cold spots. You just put it in either a pot, crock pot, smaller cooler and it will work its magic.

From everything I have read, this is one of the best bang for your buck sous vide devices. I don’t have any real life experience with it though. I have been eyeballing the Anova and the Chefstep Joule.

Instant Pot sells a sous vide circulator, and it’s <$100 at Amazon. Can’t vouch for the quality, as I’ve not pulled the trigger on a sous vide circulator yet, but I’ve been VERY happy with my Instant Pot pressure cooker, so there’s that, at least.

I also use a Chrome extension called Keepa to track prices on items I am interested in on Amazon. You can set up alerts when something exceeds your target price threshold.

FWIW, as I write this, the Anova circulator is showing up at $109 for me on Amazon.

Bluetooth version is down to $99 on Amazon. I had been waiting for the Monoprice one to be restocked but this is really tempting.
