Wonder why he didn’t use the butter from the bowl in the sauce.

I think it is a temperature reaction thing - I could be wrong, but I know in making some sauces, the temperature of the butter makes a difference. Or, he may wanted to control the garlic - I’m just glad he said not to throw that away! LOL
