Affect of sugar when curing bacon

Hi everyone.
When you cure bacon, what are your thoughts to using sugar / syrups? Sarah Wilson (anti sugar Australian journalist) says not to worry because you wash off all salts / sugar prior to cooking the meat for the first time.
It seems all traditional bacon recipes call for sugar, but keto ones do not, even though washing the meat is always called for prior to cooking.

A great deal is removed. But, sugar is not needed from a curing standpoint. It’s there for taste. The salt however acts in the curing process, so that cannot be eliminated.
