A cooking gadget I am not familiar with, no idea such a thing existed. Is there any issue with the plastic being heated? For example I only microwave glass and ceramic

Supposedly, the water never gets hot enough to cause an issue with the plastic, also the manufacturers use polyethylene which is considered safe even for microwave cooking. Sous Vade will not get your food nearly that hot.
But if this is a big concern, you can get silicone baggies that work fine for Sous Vide cooking. I am not a fan but have a couple of friends who wouldn’t want to live without one now.
