Just my thoughts… if your hysterectomy was removal of your uterus only…you’ll still have mild pms symptoms every month. Uterus has no hormones but ovaries still do their thing.

Possibly not much help with your original question here but your example of a typical day seems to be terribly short of nutritious whole foods. Sure, you’re probably hitting macros but if I ate like that I’d feel rubbish within days.
You’ve got no nuts in there, no avocados, no quality oils, no spinach and greens, no oily fish, no berries - none of the whole foods that are recognised as being healthy whatever type of diet you’re on.
Personally I’d start from scratch with whole foods and a decent diet plan - maybe cut out dairy and definitely the artificial sweeteners to see if they’re an issue for you.
Maybe switch the sparkling water with aspartame for la croix or another flavored sparkling water that is not sweetened(?) Some occasional artificial sweetener is ok (not for everyone), but sipping on aspartame all day is probably not helping. Good idea ditching the scale for a while. I am on day 4 and on day 2 I had some water retention. My hands were swollen and tight when I made a fist. I think it was from the extra sodium that I’m not used to. However, on day 4…today I don’t seem to be swelling as much in my hands. But yesterday I was chugging water and had a lot of bathroom trips.so I think I lost a lot of the water. And I didn’t eat as much sodium yesterday. I’m new to this so idk if this helps. But I think I figured out what causes my fluid retention/weight gain at first
