100% dark chocolate. Too good to be true?

(Mike W.) #41

Totally different. I couldn’t even stomach bakers chocolate.

(TJ Borden) #42

It’s acquired. You have to work up to it

#43

anyone chew raw cacao nibs, I get them right from a local farmer, Also took some getting used to

#44

I can’t eat the baker’s chocolate either. Actually I haven’t tried for a while but I remember it being very bitter, that’s why I waited so long to try the Montezuma Absolute Black. I’m not sure off the top of my head what’s different about it, but I do like it a lot. Maybe you should try it out.

(LeeAnn Brooks) #45

Maybe, but TJ’s has cocoa nibs in it too.

#46

i just made a 100% chocolate paste from my nibs its cooling now so will let yo know how it turns out

Omar, I’m not sure which of the above pictured bars you are referring to in your question, but regarding the Valor bar you pictured in your second post, they sort of pulled a fast one on their label. They say on the front of the label that it’s sweetened with stevia, but probably much of the carb content is coming from the maltitol, which I believe as a sugar alcohol (and not a good one for keto either) is included in the total carb tally.

(Omar) #48

Thank you for replying

I included the picture below

It says 5 grams of carbs per serving. 2 of which are fibers.

A serving is 15 g

am I reading correctly?

thanks

#49

Got it. Yes I think you are reading that correctly. 3 net carbs per 15g, which for the whole bar would mean 24 net carbs, because it’s 8 servings.

I think I understand. I believe @Baytowvin was referring to the Montezuma label posted by another user for his calculation, then posted the picture of the Ghirardelli bar for comparison.

(LeeAnn Brooks) #50

So it’s 3 net carbs per serving. 24 net grams for the whole bar.

But I find I usually use a smaller amount than the serving size. For instance my Giardelli calls for 3 squares, but I find 2 does the trick just fine.

(Omar) #51

I also start by convincing my self it will be less than a serving. But then, like unplanned pregnancy :joy:

Do you have a shot of the list of ingredients? I find it is really important to check both the nutrition panel and the ingredients, in order to detect hidden sugars.

(Alec) #53

As all good chocolate should be. That’s what makes it whole food.:rofl::joy::joy:

(Omar) #54

I took a photo while on the supermarket shelf

#55

my first ever taking roasted beans and made chocolate, I know everything in this product 100% pure Dominican cacao. It actually turned out much better than I expected.

#56

The ingredients are listed in this image (copied from the original post above from @Alpha), is this what you meant?

Thanks, @Callisto! Yes, this photo of a European nutrition panel confirms my suspicions. When the portion size is 100g rather than 15g, the sugar content (maltitol) becomes clear. Although I have to say, that that is a very small amount of sugar alcohol. I suppose most of the sweetness comes from the stevia. The other photograph is from the type of label required under American law, which allows the portion size to be determined by the manufacturer and permits the manufacturer to list as 0 grams any sugar content under 0.5 g/portion.

So @Alpha, the product is fine. You don’t need to worry about such a small amount of sugar alcohol. I was just concerned because American law basically permits manufacturers to be deceptive on the nutrition panel.

#58

I believe they are two different products though. The label showing 15 g as a serving size is from a Ghirardelli 100% cocoa bar (no sweetener, I think, we’ll have to check with @Baytowvin who originally posted that pic) . The one I copied just above with the 100g serving size is from a Valor bar. All the pics are getting confusing! :stuck_out_tongue_winking_eye:

:joy:

All I have to say about the Valor bar is, they lost me at “fat-reduced cocoa powder.”
