I have been on a Keto diet for a week now and I feel AMAZING!!! I do not want this to stop and I am down 7 lbs. “Keto Coffee” is my new addiction and the extra fatty foods are not so bad either! I am doing really good at my carb counts. I am below 20 and so terrified of hidden carbs I was at a 2 one day. LOL I DO not want to mess up. I LOVE this feeling. Where I am getting confused is certain “Keto” foods that seem to have a lot of carbs or sugars in them that I see in recipes, i.e. Peanut Butter, Sriracha. Am I missing a certain brand to look for that have lower counts? Also, how long do I stay at 20 or below. I have read some articles that say “forever” other that say 30 days then slowly raise it to 50. Then some that say on a really hard workout day carb reload after but stay under 200. Please help this confused new “ketoer”. I am soooooo happy and feel so good, but I don’t want to go overboard.

You just need to get into the habit of reading ingredient labels. Peanut butter doesn’t work for everyone, it does for me and I get through about 3kg a month of the 100% peanut type.
Some brands are sneaky and you’d think them to be keto when they’re not, but reading the ingredients will get you through ok.
My best advice is to just do the hard work and start journaling your food. After a little bit, you’ll find out what works for you.
I’m on week 8 and just shifted my “#Macros” in my attempt to dig a little bit deeper into my own deranged metabolism. It gets pretty fun after a while. I love being my own science experiment of one.

I agree with the others. Reading labels and tracking your food using myfitnesspal or whatever your app poison of choice is. Then do what works for you.
And I agree with you. I feel great as well on Keto. I started my journey not for any medical reason or weight loss goals necessarily. I am involved in a study that keeps me accountable … which I felt I needed initially but I certainly dont need that motivation to stick to it anymore. In fact, I was told the other day that I have been the model subject as my diet and ketones have been considerably better than everyone elses before me. I credit that solely to how great I feel on the diet.

I am journaling EVERYTHING!! I take note of everything I am putting in my body and drinking so much water I am emptying my 5 gallon jug in 2 1/2 to 3 days. I guess I am just more asking that if I do try that food that has sugar i.e. Sriracha. How bad will that set me back? Or is that one of those things where 2-5 g of sugar a day is not that bad?
Truly, no one can really answer that for you. Be courageous and experiment with what it is for you (or not). I have enjoyed not having cravings, not caring about sweet anything that the experiment just wasn’t worth the possible trade off. I admire the experimenters, I learn alot from their posts (thanks all you N=1). I have found that not chasing the sweet taste works best for me, so I limit or avoid the stevia, erythritol, or any of it. Life is sweet my food doesn’t need to be…ok, except when it does:)
This! Even when a recipe calls for sweetener. I evaluate how much and usually cut it by at least half. You’ll find that over time, when you eliminate all those things that have sugar (and there are soooooooooooo many), you wont need as much sweetener to enjoy your foods! plus fat = delicious
I must not be asking my question clear enough. Sweet is not a problem for me. I never really enjoyed candy, chocolate, cookies etc. I am not even saying I crave sugar, I am concerned about the small amounts found in salsas or sauces. At home this is not an issue because nothing has sugar, but if I were to go to lunch with a friend and a gram or 2 of sugar sneaks into my food, do I have to worry?
As long as you account for them in your daily allowance of 20g, there is no problem.
Where sneaky carbs become a problem is when you stop counting them … and instead of the 2 carbs you get from that 2 Tbs Salsa, you disregard them and eat a whole cup of the thing thinking that ‘salsa is ok’.
Anything that is not 0 card has to be monitored and accounted for …. EVEN some things that are ‘0’ carbs are not ‘really 0’.
Heavy cream for example is near 0 … but not quite. Drink a whole pint in a day and you will have consumed quite a few carbs.
I use Sriracha all the time. That doesn’t mean you should nor could.
How important is using Sriracha?
If Sriracha is important to you, then make allowances.
You can always cut or decrease carbs from other sources.
Turn it into a game and find out.
Make sure you keep score and be fair. Cheating only cheats yourself in this game.
