Is yeast permitted in Keto. I have a biscuit recipe recipe with almond flour and 4 teaspoons of coconut flour and I made it and it was really good but I thought if I would have added used to this could have been more fluffier and better question mark do you think yeast will add fluffiness? Is yeast a carbohydrate? I know it’s an organism but what is its relationship with carbohydrate
Yeast
Yeast usually lowers carb content, as the yeast “eats” carbs. You could try yeast, but what would you feed it? Do you proof the yeast beforehand?
Some people have used yeast with success. Apparently, it’s a lot more difficult (takes more experimentation) to get right, relative to bread/wheat.
Karla, I make a Keto Biscuit that calls for baking powder and they have a nice texture.
Yeast requires gluten to work properly. The gluten creates that stretchy dough that happens when bread dough is kneaded. It’s almost like micro balloons in the dough that stretch and fill with CO2 from the feeding yeast (rising). Almond flour and coconut flour have no stretch quantities like wheat or grains with gluten. Bread flour (winter wheat) typically has a higher gluten content. That’s why biscuits, muffins, cakes etc. have a different texture. The lower gluten AP or pastry flour isn’t worked into a kneaded dough and baking powder or soda are used instead because the bubbles form as the quick bread sets. You can use a little lemon juice in your biscuit dough which will boost the activity of baking soda. This is like using buttermilk, yoghurt or sour cream in a quick bread or pancakes. You can get the same effect from a teaspoon or two of lemon juice. It’s the ph change that does it. Either one will make your biscuits fluffier. Buttermilk would be my first choice for biscuits.
Nutritional yeast and brewers yeast actually puts your ketogenic diet on turbo boosters (endless pieces of research on that alone) especially when or before fasting and so does wheatgrass powder.
Makes you super healthy because of the organic natural vitamins, I take all three, all the time and have endless energy, more like super zapped with electricity.
You want non-fortified or un-fortified nutritional yeast or brewers yeast; that means they don’t add man-made vitamins, all organic vitamins.
I mix all three together and place in gel caps and take like a vitamin, usually take two or three at a time three times a week or something in that range, I stay away from man-made vitamins when possible.
All three contain real vitamins and are processed by the biological pathways much differently than man-made vitamins? Hmmmm?
Un-fortified brewers yeast usually goes for $30.00’s at a health food store.

Low Carb/Keto Biscuits
Preheat oven to 450°. Spray baking sheet or place silicon mat.
1 Egg
1/4 C Sour Cream
2 T Melted Butter
3/4 C Almond Flour
1/2 T Baking Powder
1/8 t Salt
Whisk wet ingredients, add try ingredients, stir until combined. Drop by spoonful, bake 10-13 minutes. Makes 6 biscuits.
*You can also add shredded cheese (1/4 C) and garlic and onion (1/8 t each) for a savory biscuit. I have also sprinkled cinnamon and granulated Monk Fruit for a nice “sweet” biscuit. Enjoy!!!
Thank you. I might make these this weekend (maybe with the lemon juice trick from @David_Stilley). While I never really ate bread or biscuits pre-keto, cooking chaffles has made me realize that it’s sometimes nice to have something that’s “bread-like”. I can eat a “sandwich” of just meat and stuff on top of it, or maybe large lettuce leaves, meat, etc., but chaffles make the whole process a lot less messy. And my wife and I periodically make meals with “gravy”, and it would be nice to have something to sop up the gravy.
