Im currently eating enough fat, around 2100 calories and 11g carbs per day but my protein is also way above the amount i calculated,

Will too much protein halt my weight loss
A lot of people recommend 1.0-1.5 g / day / kg of lean body mass. At 353 lbs., you weigh 160.45 kg, which is probably around 96 kg of lean mass. So you could eat around 100-150 grams of protein a day, which works out to 400-600 g, or about 15-21 oz., of meat. (Even beef isn’t 100% protein.)
There are two problems with “too much” protein: (1) it can stimulate insulin production, though it does so at only half the rate of carbohydrate, and (2) rally too much might kill you from ammonia building up in your blood. (Not a serious risk, because you’d have to eat an awful lot of protein for that to happen.)
Your protein goal is a target, so don’t worry about undershooting or overshooting somewhat. It’s keeping your carbohydrate low that is crucial.
My personal experience (and I specifically tested for this) was, as my daily protein consumption increased my weight loss slowed accordingly to the point that eventually it stalled. My limit to maintain some amount of weight loss was approximately 180g. Hope this helps.

Ron, if you don’t mind my asking, what was your lean body mass estimate at that point? In other words, how many grams of protein to a kilo of LBM?

One hundred eighty grams of protein translates to an awful lot of meat, btw! That’s a pound and a half, right?
You would probably be better in the 125 to 145 range but 160 wouldn’t stop me but would slow down my weight loss. Remember though that everyone is different. Try to keep as low as possible would be the safe coarse of action to lose weight.
Antelope is good table fare if properly cared for during harvest… Season actually opens here in 2 days for antelope but I like to use my time allotment for the elk and venison gathering. I only have to feed myself so I don’t harvest more than I need. With the wild fish and birds, I don’t lack meat so this Keto lifestyle is a blessing.
160 is good for protein, 2300 in calories are good too for a slow steady weight loss. Patience! If you want it to go a little quicker you could drop it to 2100 cal safely, should take 1 year on average.
