Will beet Kvass kick me out of keto

Hi,

Im following a Paleo, ketogenic diet which is helping IBS massively.

Im trying to increase my range of fermented foods and wonering if consuming beet KVASS will kick me out of keto?

There was about 2tbsp of honey in the jar at the start of fermentation but the good bacteria should have eaten this now and you cant taste it. Its a very strong, tangy taste, with no sweetness of the honey left.

Does anyone have experience in using beet kvass on a ketogenic diet?

I’ve never heard of it but have successfully used both kefir and kombucha (home made) while being keto and they’re both brewed with sugar. I did leave them slightly longer than what’s considered ideal to make sure as much sugar as possible was gone.

Fermented foods in general are good to go for the keto diet if done correctly, and as you already highlighted, most of the sugars have been digested by the bacteria.

I drink kefir (fermented milk) on a regular basis and its very sour compared to milk / yogurt.

EDIT: Home made kefir, double fermented to make it extra sour. Not the shop bought stuff.

Perhaps test your blood sugar before and after a serving of kvass to determine what impact it has.

I would advise against drinking it very often, unfortunately. It’s a great-tasting drink… but beets are so carb-heavy, and that carries over to kvass. A 10-ounce glass of kvass has 14.9g net carbs, which is more than 12 oz. of Guinness stout. Dry wines, in contrast, have 2g net carbs. Longer fermentation might lower that a bit… but storebought… it’s almost an entire day’s worth of carbs packed into a 10-ounce glass.

  • 76 calories
  • 0.6 grams fat
  • 16 grams carbs
  • 1.1 grams fiber
  • 14.9 net carbs
  • 114 mg sodium
  • 1.6 grams protein
