Wild boar

Near the front entrance of a meat shop, Siena, Italy.

I’m amused, while the package announces proudly that this is wild boar, the ingredients list the contents as feral pig. I suppose that is the same thing, but a rose by any other name didn’t taste quite so sweet.:boar: :pig2:

(Bacon is a many-splendoured thing) #23

Suppose it were called “free-range pork”?

(BTW, I don’t know if it’s still there, but there is or was a restaurant in Florence near the Ponte Vecchio, called Il Cinghiale Bianco, the White Boar. Great food. I wonder where they source(d) their pork from?)

If feral hogs/pigs have less fatty bacon, I was thinking that would be a good use for the large and increasing number of them in the U.S…

Texture and taste was more like mahi mahi, not really land animal texture at all.

Of the three, I’d go for camel again, the hump meat is delicious and oh so tender.
