"The crust is made from cauliflower, of course, along with almond flour, egg yolks, extra virgin olive oil, Parmesan cheese, skim milk, tapioca powder and cornstarch.

The crust is vegetarian, gluten-free and has only 40 net carbs."

Soo close, yet soo far…

That’s the problem. To make a cauliflower crust commercially consistent and acceptable, ‘you’s gotta adds dem starches!’

California Pizza Kitchen does a gluten free cauliflowercrust. When asked what they bind their cauliflower with, the waiter said “flour. It’s gluten free of course!!”

Man I hate this about eating out. And they will indeed trick a lot of people who aren’t as aware as us veterans are. I always told myself if I was able to open a restaurant, of course it would be a keto one. There aren’t things like that out there for us really. Came across a few when I lived in NYC, but their options were minimal at best.
