What's your go-to lazy keto dinner?

(Davi Ken) #1

I keep falling back on the same few meals when I don’t feel like cooking, and it’s getting a little boring.

What’s your favorite lazy keto dinner? I’m hoping to steal some new ideas for those nights when the last thing I want to do is stand over the stove.

We call our go-to lazy dinner Mash. I use 80/20 ground beef with chopped onions, some sort of seasoning, and riced cauliflower. I make different versions of it depending upon the seasoning. One of the favorites is when I add taco powder and use Mexican style cauliflower rice. I’ve also done a version using chopped up rotisserie chicken, still with onions and cauliflower rice, but then I add a jar of green enchilada sauce.

If you have an instant pot, there are quite a few keto recipes you can make in a relatively short period of time.

I also keep frozen burgers for such occasions but if I have a little more time, I cook either shrimp or haddock from the freezer. They are quickly defrosted and sauteed with a bit of garlic, butter, lemon juice and olive oil are wonderful. I use frozen cauli rice as a side. Also so simple and easy.

Most of my dinners are lazy. I cook in batches and separate into fridge and freezer portions. Then I just reheat (or eat cold if appropriate).

Sometimes I buy a rotisserie chicken and eat it for several meals, usually with my go-to premixed sauce (2/3 avocado mayo, 1/3 Huy Fong chili garlic sauce).

I’m fairly predictable - steak, chicken Maryland, salmon (twice a week), butchers pork and fennel sausages all on rotation. Salad and avocado with home made vinaigrette. Occasionally chicken curry with cauliflower rice and green vegetables. I don’t spend a lot of time cooking. I finish off with 20g 90% dark chocolate.

My go-to lazy meal meets my sweet tooth needs and takes less than 5 minutes.

It’s a keto/carnivore ‘egg nog’/smoothie.
2-6 eggs depending on what my previous food intake has been, an equal amount of heavy whipping cream and an equal amount of ice. There’s LOTS of flavor drops you can get with either stevia or monk fruit in them. I use 2 packets of truvia and then sweet drops - my favorites are raspberry or chocolate, but there’s also pumpkin spice and other fruit flavors.

I know some people think the sweet flavors are not a good idea on keto, but they help me stay on keto, so I call them a win. You could also use extracts like vanilla, orange or banana if you don’t want the stevia or monk fruit. Finally, avocado makes the smoothie much creamier.

Excellent ideas! I had forgotten about ‘egg nog’.
Used to have half a dozen eggs in full cream milk when a kid and some vanilla and loved it. Used to call it an ‘egg flip’. How could I forget!!

An egg.

Chicken Maryland? Is that a recipe/way of cooking/preparing chicken?

Omelet with bacon, cheese and onions (and mushrooms if I have fresh).

ETA: If I am really lazy I skip the bacon and have a dinner in under 10 minutes.
