Whatcha cooking for Christmas?

We had a big hotdog/s’mores sleepover with 9 grandsons on 23rd. The AM of the 24th was chocolate waffles…so far not so keto, eh? I have a huge Wagyu brisket in the smoker along with pork ribs for the dinner on the 23rd (and any non keto sides). SWMBO always makes fudge and peanut butter hershey’s kiss cookies and check mix by the ton. I bought a 23 pound USDA standing rib roast. Carved the ribs off and sous vieded them 36 hours. Then smoked for 4 to get a nice bark and we inhaled them as snacks.

Christmas Day will be prime rib. Sous vide and sear approach. Happy Holidays to all and to those who celebrate Christmas Merry Christmas!

Nothing, Nada, Bupkus, naught, zip, diddly, zilch, zero!!
I started a 7 day fast last night, after some R&R - ribeye and rebel!

I roasted a duck on a bed of veggies and added blue cheese to melt into the jus. I like to use the cauliflower which looks like rice for the illusion, add some chopped up zucchini, red bell peppers, onions and broccoli, and let it all get crispy on top. The grease of the duck mingles with the veg to give it a great flavour. Talk about getting your fats in. Before I would also have avoided the crispy skin which is really the tastiest part. For dessert I had a few strawberries sweetened with erythrit and self made whipped cream. LOTS of cream and a few strawberries. Keto sticks have turned a lighter shade, but I am still around 0.4. Oh well, It s Xmas.

Sounds great but do the strawberries need sweetening? I find they taste really sweet without adding anything.

I find tomatoes taste so sweet since I started keto. But I am a newbie, and its Xmas and I wanted the strawberries to gather that sweet nectar to spoon over the whipped cream. It was lovely- to have a dessert once again. I might do this once in a while- like maybe once a month. Or bake a keto cake one day. Its all keto in the end. As a newbie I am just getting started and really shouldn’t try anything like this, but its Xmas.
But that is what I like about this way of eating. The variety. And I searched all over to find some strawberries. Very strange that they were so hard to find, but I knew strawberries have the least carbs of all the berries. HEY! What about rhubarb?It is really a veg but you can use it for desserts too.

Fondue with ham cubes, ketoed breads for dipping, along with some lightly sauteed broccoli and cauliflower. A few cubes of apple. Served with champagne and 88% dark chocolate candy bar.

USDA prime rib roast. SOus vide 8 hours. rosemary crust and sear. Will smoke the ribs later.

Sous vide a turkey breast for 24 hours which was delicious and moist. Fresh cranberries with allulose. A Lebanese spinach dish that was awesome.
