Smoked pulled pork last night, what should I do with all this glorious left over fat?

Heat it up, add 1-2 ounces of cream cheese (more or less) and stir until cheese is meted, add in 1-2 ounces (more or less) heavy whipping cream, and a little pink salt. Stir well and use as a gravy over your pulled pork or as a dressing on your salads. you can also use what you just made as a soup - add some cooked meat and maybe a handful of fresh spinach. Cook until the spinach is more or less done. None of these are exact science, but tasty, none the less. and all help with upping the fat without upping the carbs so much.

One time I had the juice and fat from a cooked chicken. I mixed in a couple of tablespoons of mayo and whisked with a whisk to emulsify it and dropped in some chicken pieces and a handful of veg … oh so good.
