What?!? oysters have carbs?

SO… I eat raw oysters in units of 12 and while I have been ketoing for for almost 3 months I have only been tracking faithfully for the last month and only tonight went out with the intention of slamming down a couple dozen of my favorite mollusks.
Then I tossed them into cronometer… 12 medium Pacific oysters raw… 26.8 grams of carbs… not sure if it is right but that talked me out of (at least) another dozen

How on earth does an oyster even have carbs? Fish don’t have carbs. Cows don’t have carbs. Why do these delicious creatures?

Yeah - shellfish often have some carbohydrates…

They tend to be good, nutrient-rich food, and while I hear you on the carbs in oysters, I just don’t worry about it.

“oysters have carbs in them due to the glycogen in the muscles. Animals, upon death, go through some rigor mortis at which time sugar is depleted from the muscles. Glycogen is actually stored in muscles for future glucose needs. When animals die, the glycogen is depleted from the muscles, leaving them carb free. In the oysters, however, the glycogen remained in their muscle tissue, so carbs remained present.”

I do oysters once or twice a year. If grilled then I put melted butter on them. If raw then a drop or two of hot sauce. I haven’t dropped out of ketosis doing so. At least I don’t think so.

Liver also has carbs but it’s very healthy and I eat it anyhow. Just don’t overdo it too often and keep a super tight reign on the rest of your carbs when you have them. They are chock full of highly bioavailable essential nutrients, I wouldn’t give them up. Vegetable carb sources can’t make the same claim.
