What does a "normal" blood glucose "spike" look like?

On the left, I show some screen shots from “Glucose Goddess”, and this is from her Instagram account. She uses a CGM to test various ideas and tries to find techniques that lower blood glucose.

Many of these have a single “food” (like dark chocolate + almonds), but they have a “double” peak. Both of the ones I show on the bottom have this double peak.

Also, they last 2+ hours.

Compare with mine, which I show on the right side. This was a dinner + ice cream for dessert with my wife. The dinner had a sweeter drink, and I tried to keep keto, but I did have some rice + beans at the end of the (Mexican) dinner. I get one peak due to dinner and one larger peak due to ice cream (at a different place)

But those are two totally different meals, and the entire two different meals are done within two hours.

Are her blood sugar spikes “normal”? Am I producing too much insulin and therefore creating a spike that’s too short?
