What do you pack for lunch on a busy workday? Looking for low-effort ideas

I’m trying to be more consistent about bringing my lunch to work instead of scrambling for something keto-friendly at the last minute. I usually end up with the same leftovers over and over, and it’s getting pretty boring.

What do you pack when you need something quick and low-effort? I’m looking for ideas that don’t need a ton of prep the night before. Anything that survives the commute and a sad office fridge would be much appreciated!

I throw a pound of ground beef in a skillet and mix in a few eggs and butter when it’s just about done. It only takes me 5 or 10 minutes.

It’s been years since I took a lunch to work, but I used to prepare portions on Sunday and freeze. In the morning grab a few things. By lunchtime the food was thawed but still cold.

For things that can’t be frozen (e.g., boiled eggs), I might make a few mid-week and put in the fridge.

So on a given day I’d have some of the following:

Roast beef or pork
Chicken
Shrimp
Boiled eggs
Cheese
Sausage (home-cooked)
Pepperoni, etc. (if you eat processed meats)

I can’t remember whether I took vegetables to work.

I usually have bone broth with evoo plus one or two of the following - double cream Brie, goose liver foie gras with seed biscuits, Chief beef sticks, macadamias.

For me I usually pack some bone broth, tuna salad, vienna sausages (yes I know highly processed but so yummy). I definitely need to start prepping my lunches, like you I’m usually scrambling at the last minute.

I’m essentially a gypsy. My cooler will have HB eggs. Cooked chicken. My non-perishable cooler has “High Protein RX bars” and some other protein bars I dip in unrefined coconut oil. The bars and oil really add to the taste. I dip “Harvest Snaps” in salt for an electrolyte boost. Seaweed.
