What Did You Keto Today? Part IV

food

(Ron) #664

Last nights dinner and today’s meal. Smoked beef tri-tip. Turned out great!

You did it right, I managed to put too little cheese on it and/or baked it for too long, my mind was elsewhere… My SO’s pizza (with his whole wheat bread dough) was nice, mine was too dry and hard, I was a bit sad, I made everything and mine wasn’t good enough… Oh well, I will do it right next time
I love my keto bread pizza, my keto bread tastes worse as it lacks the stuff on it successfully masking the gluten flavor… Each to their own, it seems  It probably matters that I use a super thin crust as I prefer that. And I made little tweaks on the keto bread too. Sometimes a little change matters a lot. And even the same recipe doesn’t turn out the same.

Not exactly. I have not even much idea what corned beef is… I saw a picture here but I still don’t know. I had no idea it is processed. I don’t eat bacon and always disliked salami.
I eat smoked pork since a few months but while I was doing vegetarian keto (the previous years except when I was off keto), I ate differently. It’s easy to buy simple fresh ingredients, some dry ingredients and cook, I did that in the last several years. I have some nice plant-based keto dishes too, oily seeds and spices are helpful. I avoid vegetables as much as I comfortably can as they are very carby but a little can be helpful. Ideas as everywhere, in this topic, on blogs… I actually got ideas from normal vegan blogs before, I got pretty good with lowering the carb content of a food

I personally don’t eat breakfast and I don’t need different food items for different meals as my desire towards eggs replenishes between meals. A hungry me loves eggs.
I always eat eggs, eggs, some more eggs, some meat and if I am still hungry, eggs. And sour cream, cheese, whatnot, I can spice my eggs with so many extra ingredients… There are lots of options even on carnivore let alone keto, even if one isn’t an egg freak :D.

Sloppy Omelette and Bacon

Omelette with Onion, Serrano Chili Pepper, Avocado and Colby Jack Cheese

I got ahold of some really nice green eggs that have the reddest orange yolks I have ever seen. As lovely as the beautiful ones @CrackerJax gets! The picture just didn’t capture the color, the eggs looked like orange Cheddar Cheese. :cowboy_hat_face:

Thanks that’s a good idea I’ll look
Into vegetarian and vegan options! Meanwhile I’ve bought some full fat natural yoghurt and frozen berries so that a couple of nice brekkies!

Looks absolutely delicious!

I had smoked salmon and scrambled eggs for lunch and for dinner I had … . Pudding🤗

Raspberry, rhubarb and orange frankenfluff with rhubarb and cream! :yum:

Finally, I took a shot! It took some planning as I normally just grab whatever after my few obvious courses are eaten. It’s a very proper meal plan for me:

What I actually ate today, that is something quite different… I think I never messed up my own plan when it was already made into dishes on a tray. Oh well.

But let’s see what is here.
2 soft-boiled eggs (in the small mug. or is it a cup? it’s something in-between for me but English isn’t my native language), one perfect softer hard-boiled egg, scrambled eggs (2 eggs), egg stew (3 eggs and it’s the carbiest item by far as it contains onions and tomato puree, it can’t be helped), fried beef (it wasn’t charcoal colored in real life, only some deep, almost black brown. I used soy sauce and well, frying. If I fried my eggs “properly”, the way I usually fry things… Into oblivion… That would be brown too but I realized I like soft eggs at some point and stopped making them that way when I didn’t use extra ingredients).
Oh and smoked pork ribs, cheese and unusually much vegetables (how things change… I considered 1000g vegetables a minimal amount before). I LOVE red radishes and my SO appeared with a bunch of them! My normal attitude is eating almost only my own vegetables. Like the little onion, that grew in a flowerpot in my window.

The stuff behind the ancient tray (I don’t know the word for it) is the lower-carb one as it depicts cherries. My SO has the “almost every imaginable baked stuff” one. It’s pretty. Well, both are several years old but we like them.

So, it was a perfect plan, a perfect sized lunch, well considering it’s close enough to carnivore in my world, maybe even too big for a lunch but it’s fine, it just makes dinner easier.

I ate 4 eggs and got full. It happens since my first carnivore trial, never before, to put it lightly. There is a reason it was my plan for a lunch when I really want to lose fat already so I need to eat realistically little. I ate a few more bites but that was it.
At dinnertime I had no hunger but it never stopped me before. Low-calorie days never work so I had dinner. I made little progress but realized I totally can eat something very different and I did. I only admit the 2 pancakes now. Oh and I am not ashamed about the green peas soup at all, no way I skip that, it even had tender pods from my garden (it was in the freezer for almost a year and it was often in the way, it’s hard for me to live with such a tiny freezer space). I ate little and realized I can’t eat green pea soups, insanely sweet. All that peas and onions and carrots and dried parsnip cubes, the latter was totally unneeded but my SO had to put it in generously. They were everywhere. But it’s cool as he usually puts potatoes into everything with vegetables… He can’t not to, we all have our limits when making dishes I presume. I put eggs into everything, for example. I seriously need to think hard to imagine a dish for me where I didn’t do that. If I make a dish often enough, it will happen. If it already has eggs in the original recipe, I add more.

Here’s my proof that Rhubarb is evil! :imp:

If Rhubarb was good you wouldn’t need a ton of sweetener to make it eatable! Sorry Jax, not a Rhubarb lover!:nauseated_face::nauseated_face:

@Shinita That’s a lovely looking meal. I don’t know much about Hungarian foods but my Grandmother was from Hungary. She died before I was born so I never ate any of her foods. :cowboy_hat_face:

Sounds good I guess, just almost no calories to me but I can’t talk as my breakfast is strictly 0 calorie (or a few, I drink coffee or tea)… I am into sour cream myself and as my original plan is as many (almost) carnivore days until my massive multi-fruit season starting in late May, I use lemon juice. I love lemon anyway and I just realized it’s great with sour cream. I have some very rich one now from a local place with 25% fat content, it’s quite delicious. They go everywhere nearby with their 2 small trucks and sell good stuff  It is in my village for two hours on Monday afternoon, perfect timing for my SO to buy dairy the way home from work!

I got a bit enthusiastic, we rarely buy dairy from them but today we got a bunch of stuff, even milk. Too much sugar for me so I just tasted it. I start to miss HWC in my coffee…

(Rebecca 🌸 Frankenfluffy) #674

I sowed two more rows of these yesterday! Can’t wait! @Shinita, your pics are beautiful!

Bit of an Indian/Thai/Scandinavian fusion here at Chateau Snaps this evening.

Thai yellow fish curry, fried spiced homemade paneer… washed down with some Aquavit (an impulse purchase from IKEA the year we got married - yes we bought it for the name) because desperate times call for desperate measures!

(Full Metal KETO AF) #675

And the verdict? Was it awesome? It held together very nicely without crumbling. :cowboy_hat_face:

(Rebecca 🌸 Frankenfluffy) #676

IT WAS AWESOME!

Held together really well - I was pleasantly surprised! The eight pieces represented half of the block I made - so four each - same again tomorrow I reckon!

Tossed it in a mix of salt, ground cumin, ground coriander, paprika and turmeric, and cooked it in a load of butter. The outside was buttery, caramelised and chewy, and the inside just melted in the mouth and had a really lovely mild dairy taste inside the spicy crust.

I’m in love…

This is what I did: https://healthynibblesandbits.com/spiced-pan-fried-paneer/

I needed to use up some salad fixings, so … beef fajita taco salad. I put it in this “Jethro Bodine” bowl because I like to mix everything up after I get it assembled. This got one more bag out of my freezer, too. Shelter in place has gotten my freezer better organized than it’s been since we bought the fridge!

#678

Thank you! I sowed red radishes too, a few weeks ago, some of them are out, we will see, I never managed to get much or big ones but even a few smallish will be something to be glad about. Hopefully more than a few, I have 2 rows… Maybe 2 years ago I had multicolored one! Red, purple, white, yellow radishes… That was good but my favs are the red ones, so pretty!

I start to miss curry, it would be good to find some good fish somewhere, we made fish curry once and it was great.
We usually did vegetable curries but they don’t work for me anymore.

(Mame) #679

Yours sounds so awesome! The fried cheese I show in my pics is always paneer from Costco. I have made it in past but the costco paneer is just as good for me. Of course I am lazy at times…

(Rebecca 🌸 Frankenfluffy) #680

Awww, thanks @cervyn! I find this forum so inspiring and a great source of ideas for what to do!

I’d only ever had paneer as part of a curry dish before - I’d never made it, nor had I ever made paneer into anything - and I was really pleased last night to have discovered I could make it at home! Used some out-of-date (but still fine) milk that I had kicking around so it felt like a low-risk activity! I didn’t have the white vinegar recommended, nor a spare lemon, but ACV worked just fine. I can’t wait to spice and fry up the rest of the batch!

#681

Early asparagus and about 30 ozs of grilled flank steak with some homemade pesto.

(Rebecca 🌸 Frankenfluffy) #682

Wow @KetoDad2020!

I like to think I played Cupid here :cupid:
Nice Snaps
