What did you COOK today?

so we have a thread about what you ate today, but how about What You Cooked Today? Maybe you came home from work dead tired but knew you needed more keto-friendly go-to foods in the fridge. Well that’s what happened to me anyhow. I’m an RN working night shift. Got home about 8:30 AM and am just ready to leave the kitchen at almost 10.

I cooked a chicken the other day (just throw it in a crockpot with salt and pepper on high for 4 hours) and it’s perfect. Then I made stock over two days.

So today I made chicken soup for a sick co-worker, chicken salad, and some hard boiled eggs in the instant pot for pickling. Also cooked a tray of bacon, made mayonnaise and sugar free ketchup (from the W30 cookbook). When I get up later I’ll use the mayo and ketchup to make Russian salad dressing (from Well Fed 2.

I really want to make some Fat Head pizza this weekend. What will you make today?

Hubby and kids were having his famous potato leek soup last night. I whipped up some “cream” of mushroom soup for me by simply sautéing green onions and mushrooms until soft and liquidy, adding some homemade broth (frozen in big cubes) and some coconut cream, a few herbs (bay leaf, thyme, salt and pepper. I let it all simmer for a few minutes then puréed it with the immersion blender. Easy and quick. Today’s the leftover soup for lunch.

I felt like I need a bit more fat yesterday, so I made beef tenderloin (on sale, otherwise the price is crazy high) with Bernaise and hearts of romaine with Chart House blue cheese dressing. That hit the ‘fat spot’ for me. :slight_smile: Tonight it’s chicken paprika with green beans sauteed in butter with garlic and lemon.

I baked a pound of thick sliced bacon and made coffee, the nectar of the gods.

Asparagus, pan cooked/steamed until bright green in a massive amount of butter, topped with Asiago cheese and pink Himalayan salt.

edit: par BAKE the bacon, it is so much easier than frying.

I just made coconut butter, Take a package of unsweetened coconut, I use Bob’s Red Mill, and give it a go in the food processor for 10-12 minutes. Then pour into a container. I like to toast the flakes under the broiler first. Eat with a spoon.
