What constitutes a blood glucose spike?

How many mg constitutes a spike in blood glucose? For example, my BG is typically n the 75-85 range. But, during testing for sensitivity to a particular food, it may go up to the 90-98 range. So, how many mg increase during the testing period is a true spike, rather than normal fluctuation?

Also, what is a good number to stay under? I’ve heard anything under 100 mg is good, but is that a universal number for everyone? If not, how do I determine what my good number is?
