That is not the recipe. They are not 2 large eggs alone. They are actually a majority dairy product, in Starbucks case, roughly 50% cottage cheese. The cottage cheese acts as a binder, so I’m not sure why they add rice starch, except to dry it out a bit.

I make homebrew versions: 50% egg, 25% goat cheese, 25% HWC. I don’t cook the protein in, as 'Bucks does, because it messes with the texture. You could use anything in 50-50, with eggs… HWC, Whole Milk, Philly, goat cheese, cottage cheese, etc. Mine is a better keto product than 'Bucks, but I don’t have to worry about customers beyond myself.

I also tried the Egg Bites at Starbucks a few months ago and they were very delicious. Thank you all for pointing out all of the facts about these. I definitely will not order them again.

I also can’t rationalize spending that much on what felt like only 1 egg. :confused:

A very dogmatic response. I suggest you try them while monitoring your blood glucose and ketone levels. I think you’d be surprised. (My hypothesis). It’s better than speculating. I’d also like to see the results, even at my most deranged, that small amount of carbs (eaten only occasionally) never caused a significant change as in overall hormonal secretion pattern. IMO, it only causes a very brief suspension of lipolysis.

Blood glucose is not the point. Displacement of 40% of my “scheduled” nutrient-dense carbs with carb :poop: is the point for me.

You can go to Sbux and buy AYCE Sous Vide eggs and I will be happy for you. They won’t work for me (and apparently several others) on a well-formulated ketogenic diet. You do you, I’ll do me.

You’re missing my point. I’m not advocating either way. I’m simply pointing out that eating them is fairly insignificant within the wider biochemical context of lipolysis.

Did just the same thing - eat and then looked it up :upside_down_face: But those delicious little bites made me purchase my sous vide - so all in all a good thing.

I fell fool to this. I ate 2 bacon ones this morning and each one is 9g of carbs. Two come per order, if you eat both your out 18g of carbs! They tricked me for sure.

I make these myself by using Starbucks recipe. It said eggs, Monterey Jack and gruyere cheese, cottage cheese ( I use ricotta instead). It did not mention any starch. They are delicious using the Sous vide. So creamy. I am glad I really couldn’t afford to buy them there if the carbs are real.

I wish I had seen this post before I did the same thing! Egg bites seem like they would be Keto friendly. After I had eaten them I checked the nutrition and then saw this post. I blew half a days carbs on 2 little egg bites :frowning:

I am going to make my own tomorrow when I am not fasting. There are some recipes on the Anova site for them (linked in this thread). When I clicked on the link in the Anova article it opened the recipe in my Anova app! :smiley:

I eat these infrequently. You sometimes have to make do with what is available in your daily life.

I am aware of the carb content and plan the rest of my daily eating accordingly.

Thanks. I like the idea of adding the cheese and bacon in before you cook. I think I will use the half cream/half cottage cheese suggestion at Chef Steps.

The cool things about topping, instead of baking in, is that you can vary it from day to day and you can have crispy hot toppings. Any bacon cooked in will lose it’s crisp. My personal favorite is going 50-50 goat cheese and heavy cream, and then topping with microwaved prosciutto.

The prosciutto comes to work with me in a flat deli container, nukes on a paper plate, and then crumbles on top of the mason jar. I have new 8 oz mason jars, that are straight sided, so easier to clean, and they stack nicely, so eager to get back into egg bites.

That said, the idea of baking in the bacon makes it much easier to grab and go after cooking. It’s all about how it fits into your life best.

I see this is a super old thread, but just wanted to mention. My H brought home some egg bites from Costco today. 2 carbs in one package! Called Three Bridges Cheese & Uncured Bacon Egg Bites.

310 Calories, 25 Fats, 20 Protein, 2 Carbs.

Makes one wonder why Starbucks needs to add those potato and rice starches. These are in the frozen section. 60 Seconds to heat.

They’re Delicious! Now I wish I had a microwave in my car for on the road coffee stops.

I don’t understand either. but they sure are missing the boat with them.

Starbucks is beginning to recognize the keto trend by carrying HWC at some of their locations. And I saw moon cheese at one recently.

A year ago when I was new to keto they only had pastries and other carbage. About all you could eat there were the meat and cheese sandwiches and ditch the bun
