Waffle fry vs large dinner. CGM decides

Today I took lunch to my sister. Chick-fil-A sandwich, waffle fries and a diet lemonade. I ate one waffle fry because it smelled SO GOOD and frankly it was everything I remember. Delicious. According to Cronometer a measly (?) 2.6 grams of carbs. My blood sugar went from 90 to 110 in 45 minutes before dropping back to 90 in another 45 minutes.

At dinner I ate a big plate of pork ribs nachos with fajita meat, cheese, jalapeños , grilled red orange and yellow peppers and grilled onions, guacamole, sour cream and salsa. Cronometer totaled up 1 grams of carbs. 3 hours later not a blip on the CGM.

It seems I have discovered yet another piece of krypton it’s to go with corn tortillas.

Hmmm…let’s see…I’ll take your plate instead of the Waffle Fry! P: S What type of chips did you use in you Nachos to make the carbs so low?

Pork rinds!

So, just regular pork rinds as nachos? That’s not a bad idea.

We’ve made “nachos” with Big Head Pizza dough, but it’s time consuming.

When I was wearing my CGM, I found some surprising data. Popcorn, for instance, caused me zero blood sugar rise. The same with salsa, at least for the amount I ate at that time. I must have eaten onions, as I usually have red onions with tacos, but I don’t remember there being much of a rise.

Meanwhile, I had what I thought was a “safe” soup from an Asian restaurant. Only had shrimp and veggies, no rice, etc. Caused almost as high as a blood sugar response as did the dessert (ice cream “cake”) I had after dinner.

To be clear. I put the pork rinds down on a foil covered tray for the toaster oven (selecting the flattest ones) sprinkle on the cheese, add meat jalapeños etc. Then broil until the cheese melts. Take out and add sour cream and guacamole maybe salsa

I guess it’s a matter of perspective, but having never had a CGM, I would consider going from 90 to 110 in 45 minutes and then dropping back as insignificant. I’ve tested a variety of foods by finger stick and my blood sugar meter and never considered that a concern.

Of course you are right. 90–>110 isn’t huge but from one fry? Especially since I had 4x the carbs in the next mea with nothing. Just an observation.

Pretty sure what you’re seeing is from the glycemic index - how quickly the carb hits. White potatoes are pretty high on those lists, up near the top. (There’s a bunch of lists around, but they all show white potatoes up pretty high)

Before going fully keto, I was on the Zone Diet (Barry Sears’ books). He was big on basing what carbs we eat on the glycemic index. The “cheese, jalapeños, grilled red orange and yellow peppers and grilled onions, guacamole, sour cream and salsa” are all pretty low glycemic index. I’m assuming that’s the next meal you were referring to.
