Vegetarian Keto

I’m about to commit the most deadly of sins, I don’t like meat. I know. Send me hate mail.
I fell off the wagon for two weeks because I ate a summer sausage and just got so bloody tired of meat consumption, I short circuited and self sabotaged.

For those that don’t know me; I’ve been keto since August. I am a smol, lazy human. I went keto because I just wanted to try something new and heard it was gonna be good for my brain.

Let’s discuss some vegetarian keto-friendly options that don’t cause you to just eat eggs and cheese all day long.

I’m thinking a nice paneer curry would be a good option.
Creamed spinach topped with an egg or two.
Vegetarian Carlshead pizza. We do this often.

I was actually just thinking about how many of my favorite options could be considered vegetarian! Cauliflower bread grilled cheese, cabbage leaf as noodles-lasagna, zoodles with alfredo sauce, eggplant egg dipped and fried in butter and of course carlshead pizza with the right toppings (yummy to do white pizza with basil and tomato!)

The book, Wahl’s protocol has some great info for vegetarians wanting to follow a ketogenic diet. It is also geared to provide all the necessary nutrients/vitamins/minerals from food. It’s a great read for everyone, but has some of the best info for vegetarians that I have read. Of course, I am not vegetarian so my point of view is skewed.

Cauliflower gratin, shredded brusell sprouts roasted in copious lard or butter, guacamole, cream cheese stuffed jalapenos.

Really blind-sided myself! Wow, the creativity and general “we already eat veggie friendly things” is making me so happy! Just the comradery alone warms my soul, I missed this energy. Yahooo keto forum, even if it’ll take me a minute to get used to.

Just off the top of my head:

Spaghetti squash “noodles” with a cream sauce, or pesto and olive oil sauce, then add whatever you want veggie wise like shrooms, small amount of onions, peppers, etc.
