Vegetarian for next 2 weeks. What can I eat?

Hi All,

I have been around, but never posted.

I am 42, M, 93 Kgs. Been keto for over a year. Absolutely stoked with the changes. Lost around 40 lbs too.

For reasons not worth elaborating, I need to be on a strict vegetarian diet for the next 2 weeks. That means, no eggs or fish either.

Need some suggestions on what I could eat in the next 2 weeks. I can’t think beyond BPC.

For clarity before you get recommendations coming in…can you eat dairy, like butter, ghee, cream, yogurt and cheese?

Avocado. Dark green leafy vegetables like Kale. Brocolli. Asparagus. And, more avocado.

Chris,

The longest fast that I have done is 48 hrs.

It did cross my mind but don’t think, I am ready for it.

Have you seen this site for vegetarian recipes…the diet doctor site has very good LCHF ideas

Then, I guess you’re stuck with nuts, avocados, cheese, milk, yogurt, cruciferous vegetables cooked in butter, green salads drizzled in olive oil, which you can actually drink as a snack, and a bunch of other things I’m sure other folks are suggesting. Sounds pretty tasty!

Well I just had a yummo dinner that was veggie. I roasted a red pepper cut into quarters in a hot oven with olive oil and seasoning then finished off with slices of goat’s cheese. Oh man that was so good. In the area of France I live there is a local goat cheese which is often served with honey - the combo goes well but not keto. The sweetness of the red pepper does the job though - so good. With that I had a rocket salad with walnut oil and balsamic dressing with some roquefort and walnuts. All in all pretty tasty!

You could do a veggie pizza.

That sounds so yum!. Will try it tonight, even if I am not vegetarian now!
