Upping Gluten for CELIAC test?

My 15 year old son (same one with the weird TSH bloodwork) had one of the Celiac screening blood tests come back way high. He has been doing great eating LCHF Keto and is down 30 pounds. He does eat low-carb wraps which do contain minimal net carbs (5 per wrap). He is still producing lots of ketones, doesn’t kick him out of ketosis. So, he is eating a little wheat, but that’s the only source. I am anticipating the GI doc will want him back on Gluten to be biopsied through endoscopy. I’m not sure how long he’ll need to be back on wheat containing products, but it could be up to 12 weeks. Any advice as to how to put him on wheat temporarily and not have him gain all the weight back? You need to be consuming wheat for the tests to be accurate. Just FYI, his blood work showed normal ttg-IgA, ttg-IgG and deamidated gliadin IgG AutoAB but his deamidated gliadin IgA AutoAB was very high at 204 (reference range was <20 was normal),

I suspect I am at least gluten sensitive, but I really don’t consume any wheat now. I don’t eat those wraps myself. I feel much better than previously on SAD diet.

Most low carb breads have gluten. Seitan also is made from gluten and is low carb, as is vital wheat gluten. I used Seitan and St. Joseph’s pitas.
