Troubling with the taste of home mayo

I’m transitioning into Keto but am struggling to find a decent tasting oil to make mayo. I find avocado oil to be fairly gross, macadamia is not enjoyable but better and the lightest olive oil I can find is still so strong. I used ground nut oil before with whole eggs but I know it’s rubbish oil now. I live in Australia and there’s not much choice here where I live. I’ve wasted precious oil and eggs on many failed attempts - please help​:pray:t2::blush:

Have you tried a blend? I’ve heard of blending avocado and olive oils. There might be a combo that you’d like. (?)

Another option is to use more eggs, this makes the mayo more creamy.

My preferred recipe is: lemon juice, 1 egg, salt, Dijon mustard, light olive oil.

If you want it sweeter, you could add some sweetener, more creamy add eggs, more flavour add more mustard, maybe some garlic.

I tried avo oil, didn’t like it. I found I like light OO the best.

I like the taste of avocado oil, so that’s what I’ve used, but the most mild flavor I’ve found is from extra light olive oil. I tried a batch once with extra virgin, and that was TERRIBLE.

I thought I was the only one who didn’t like avocado oil. It tastes similar to olive oil to me.

I listened to an early 2kd podcast where @richard made mayo with burned (browned?) butter. Also bacon grease mayo is something I would like to try.

Oh yeah, I forgot about bacon juice mayo… I am gonna do that this afternoon. :grin::grin:

I prefer my mayo with avocado oil but also find that the oil is not as important as the brown mustard and ACV. It’s been my experience that the oil doesn’t effect the flavor as much as the spice and the vinegar. My husband and I love my avocado oil and apple cider vinegar brown mustard mayo. We eat it on everything and I use it to make blue cheese dressing too!

What about the avocado oil do you find gross?
I believe as long as you use a light oil, a healthy light oil, that it doesn’t really effect the flavor that much, or as much as other ingredients, the mayo base will almost always be the same

But then again, what do I know :stuck_out_tongue_winking_eye:

Maybe just have fun experimenting and give away what you do not like

I think if you season it, you’re totally right. I’ve been on a kick of real light flavor lately and I’ve been using juice from half a lime instead of ACV, and no seasoning other than salt. It’s a very different tasting mayo, and the flavor of the oil definitely comes through, but I love avocado oil so I don’t mind.

I’ve not yet found a home recipe that turns out how I like it… the answer for me has become soured cream :joy:

I haven’t minded the taste of my usual mayo made with avocado or light olive oil, but lately I’ve been making every batch into a flavored mayo by adding stuff like chipotle sauce or gochujang sauce or a ton of minced garlic, etc. If you like any of those flavors, you might be able to override the flavor of the oil this way.

Egg salad made with chipotle mayo is pretty yummy. :smile:

Avocado oil and EVOO mayo tastes like paint thinner to me. I can’t do it.

I used coconut oil in my last batch and it turned out the best for me so far.

I don’t make my own but found Sir Kensingtons Avacado mayo to be awesome. I wasted more money than I can count on different mayo’s including other Avacado based ones and didn’t like them at all. Don’t know what their doing specifically but it’s the only mayo I don’t mind replacing “real” mayo with.

Note: Avacado Oil has NEAR no taste, don’t assume they all taste bad like that. Was most likely just that mayo / oil. When I started using MCT Oil I bought the Bulletproof branded stuff and it tasted HORRIBLE, little did I know GOOD quality stuff didn’t even resemble that garbage.

What mayo recipe most closely resembles the taste & thickness of store-bought standard soybean mayo?

My favorite recipe:

1 cup hazelnut or avocado oil
1 egg
3/4 tsp. dry mustard
3 Tbls. apple cider vinegar
salt to taste

I just put all the ingredients in a pint mason jar, put my immersion blender all the way to the bottom and blend. ONLY after the mayo is half way up the sides, I slowly raise the immersion blender to incorporate all the oil. So far this method works every time, and we really like the flavor of this mayo.

I like and use the Sir Kensington’s avocado oil mayo, too. I did a taste comparison to Hellman’s and really couldn’t tell the difference. Also, you can add a little lemon juice, paprika and sweetener to it and it tastes like Miracle Whip.
