To count veggie carbs or not?

He totally meant that you don’t count any type of veg carbs. I have yet to struggle with carbs on keto, but I am not doing the strict 20 or less carbs per day. I am usually 30-35 with veg carbs counted.
I usually have a giant salad every other day. It’s usually iceberg or romaine mixed with spinach, avocado, sunflower seeds, cheddar cheese, a boiled egg plus dressing. Granted it’s only about 3-4 cups but after I am done I typically feel sated… so I stop. I think part of the reason I am in here in the first place was that I ate until I was full. Of course I want to make sure I get my daily nutrients so I try to fortify with things I add to the salad… like a piece of salmon, some steak strips or a baked chicken thigh.
