Thanksgiving Day

So I know it’s a little early but I figured we could start a thread that prepares us for Thanksgiving. What is everyone’s plan? How to stay keto during this carb filled holiday? Or do we cheat and plan on getting back on track the following weekend???

What desserts to eat? What side dishes? Do y’all eat ham or turkey? Grilled fried or baked? This is a great holiday, how do we keep it that way with good food.

Cucumber and celery pieces topped with cream cheese or pate with paprika sprinkles for starters

Turkey (no stuffing) , cauliflower mash , crustless keto quiche

Whipped cream with some blueberries and sugar-free marshmallow mixed in

anyway, there’s a few ideas

I have no idea what our plan is, but I kinda hope it’s small and I’m hosting. If that’s the case, then I can make sure the turkey is really good…I got one from Honeybaked Ham one year and although it was pretty sweet, I loved it. If there’s good turkey, it will help me stay away from the carby side dishes.

For me I will be indulging in all the yummy goodness. Turkey, ham, pie, mashers and gravey, stuffing and everything else. I’ll get right back on keto the next day :grin:

Thanksgiving is a designated cheat day. We go out to Shari’s for the Thanksgiving dinner and then get back on the Keto wagon the next day.

I have been working on it since last Thanksgiving :slight_smile: Last year’s menu was butternut bisque; smoked turkey; mashed cauliflower; keto stuffing; creamed spinach; smoked asparagus; low carb cranberry sauce; gravy. I will be recipe-testing some ideas I found on Pinterest for green bean casserole and some other classic recipes, and I have not delved into the world of keto pie yet but want to try my hand at it. Ratatouille / tian will probably be on this year’s menu – great keto veg side. Also maybe asparagus wrapped in bacon & creamy garlic mushrooms. Happy to share any recipes I have.

I’m gonna eat what I want for Thanksgiving and Christmas.
Then I will go back to keto.

I will however use some restraint. A piece of pie not 2. 2 cookies not 4. I serving mashed taters not 2. Etc.

Easier if you have family members on keto. I don’t plan on cheating but want a good meal. Maybe some Costco crab legs and steak? Prime rib or tenderloin? If not, turkey is still pretty good. Mashed potatoes and gravy will bring out some jealousy.

Maura Vega was talking about having Steaksgiving on one of their recent Fat Fueled Family podcast episodes - if I didn’t have carbivores joining us this year I would have considered it.

@Peter, I typically use frozen spinach because it’s convenient, but fresh should be fine if you prefer. For apx 1 lb frozen spinach I add a couple of Tbl of diced onion, 2 Tbl of cream cheese, 2-4 Tbl of grated Parmesan cheese (depending on how thick/thin it is), a couple of splashes of heavy whipping cream, salt & pepper (I prefer white pepper for this recipe), just a tsp or so of lemon juice or ACV to brighten the flavors, and a sprinkle of nutmeg. It’s all approximate for taste and texture, but those are the basics of it.

Last meal before is at Noon on Wed. Eat all you want on Thanksgiving. Fast until actually hungry again.

Search the Recipes section for pumpkin cheesecake; a great recipe was posted there last year. Cauli mash is a very tasty substitute for potatoes, and the veggies we usually have around my house are fine on keto. The Pilgrim Parents may not have had broccoli with cheese sauce at that famous meal, but they should have! Anybody have a good recipe for keto stuffing, though?

@Amy_R0922 I will try to get it written down; @wickedlowcarbsteve makes it but doesn’t measure anything :wink: so I will follow him with pen and paper to get down what he’s doing and approximate measurements into an actual recipe of sorts.

@PaulL, This is the base recipe I used to get to the cubed bread part of stuffing; after that it was pretty much like regular stuffing (sauteed vegetables, aromatics, maybe ground sausage or giblets, etc. with a bit of chicken stock): www.recipecommunity.com.au/breads-rolls-recipes/lchf-paleo-gluten-free-sugar-free-nut-free-buns/1bjllyb7-43408-172340-cfcd2-y9edixa4 and adding ground sage to the dough to give it a strong stuffing flavor. Once the rolls were cooked and cooled a bit, i cubed them and then crisped/dried them a bit in the oven to get them to a more crouton-like consistency. (By the nature of the dough, it will likely not be fully dried, but that will still work).
