Summer vegetables are my kryptonite

Had the kids and 9 grandkids over with the MIL. Grilled a ton of chicken and grilled yellow squash, zucchini and red bell peppers. Okra and tomatoes. Spinach salad. Strawberries. Fresh corn (I passed on the corn, rolls, watermelon, fresh s cherries and the s’mores by the fire pit). Way over on carbs but summer time fresh vegetables are so good.

Fortunately the spousal unit is out of town next week so I can focus in again.

I grilled ribs this afternoon.

This is the first year I have gardened in central Virginia and I just put a few plants in to see what the conditions were like.

The jalapenos and poblanos are really beautiful and abundant here this year. I only planted 3 tomato plants but they are loaded and just now the first ones coming ripe. Sigh. I had a ton of zukes and yellow squash but the squash bugs have killed the plants thank goodness. I’m hoping the cucumbers finish succumbing to whatever is trying to kill it, but there is some suspicious new growth that looks healthy.

The herbs are doing wonderfully, more basil than I have ever been able to grow before. I’m going to HAVE to have a few caprese salads, no way around it. I even managed to grow celery this year. Never have been able to get that to come up in other locales. It’s totally kryptonitey.

I did several beds in strong herbs because I don’t have deer/groundhog proof fencing yet. I can’t believe how big the sage, thyme, rosemary, parsley, lemongrass, dill and cilantro got/are getting. I’m loving this hill. I’m going to try to think of the tomatoes and peppers as herbs/garnish instead of main courses.

Well, winter is coming. I’ll get back to pure carnivore soon enough…

Ofcourse we don’t want to go over our Carb allowances; and go out of Ketosis… but if you are going to go over them --it is still more “healthy” to do it with these veggies than with processed Carbage =).

I have never given up caprese salads… i just plan the tomato into the carb budget and go super light on the balsamic… I have taken to using burrata instead of plain mozzarella,loads of olive oil and basil.

Only the tomatoes, fruit, and corn sound like much of an issue to me. When I first started keto I ate giant salads almost every day. If you don’t count carbs from fiber, you can positively gorge yourself on most greens before going over 20g carbs.

Yellow squash and those big peppers are sweeter than you might guess. I love the fresh tomatoes and onions. In any event the problem was volume as much as it was choices! At least I only helped the grandsons put the marshmallows on the skewers with my son directing the marshmallow cooking. I have ribs smoking on the smoker now and a brisket planned. My daughter brought over “backyard fresh” eggs from her hens. Bag to high fat/protein soon enough.

I so envy backyard fresh eggs. I just need to finish my fences, get a couple dogs then build the chicken coop. Can’t get more “eating locally” than backyard chicken eggs! Plus, they cut down on the bug population.

I try to buy quality eggs but who knows what is really true on a label anymore.

Yes, it’s the volume. Still have a basket of squash on the counter and my only carb-eating person went back home today. Maybe because he was sick of having squash at every meal? If I had chickens they could enjoy it. It would be win-win.
