Warning: the Jello sugar free pudding mix is mostly cornstarch, and could have 24 net carbs per box.
Something that is “sugar free” or “no sugar added” can still have a lot of carbs.
Edit: Hmm. Looks like the nutrition label on the Kraft website has been corrected to the higher carb content.
Something similar to pudding that is low carb:
I have a quickie no-bake cheesecake type dessert I throw together without measuring anything:
- Several spoonfuls of Mascarpone (or Ricotta) cheese
- Several spoonfuls of extra creamy whipped cream
- EZ-Sweetz, almond extract, vanilla extract, and/or cinnamon to taste
Just mix it all up. Note that some Ricotta cheeses can be a bit “grainy”, so it may not be as creamy as expected. And, beware, some Ricotta cheeses can have a lot of carbs. Mascarpone is best – just so smooth and tasty, but it’s more expensive.
Variations:
- Fold in, or serve with, some fresh or frozen low carb fruit (e.g. sliced strawberries, raspberries, etc.).
- I’ve tried it as a chocolate dessert by adding a tablespoon or two of unsweetened cocoa powder instead of the cinnamon. Yum.
No. No good on the pudding. If you look at the already prepared little cups in the refrigerated section, the jello shows no, or almost no carbs but the pudding is ridiculously high. Can’t remember the amount but I remember almost throwing it back on the shelf.
If you’re okay with artificial sweeteners, try ‘Frankenfluff’.
It’s a sachet of sugar-free jelly crystals (strawberry) made up with half the normal amount of boiling water (so 300ml), with 2 individual pots of full fat natural yoghurt and a 250g tub of full fat cream cheese. I added the yoghurt while the jelly was still hot, whizzed it up, added the cream cheese and kept whizzing until it was pale, frothy and had expanded to pretty much fill the mixing bowl. Poured it into an old ice cream tub and chilled it in the fridge.
This makes 4 servings.
Should work. Mascarpone is an Italian cream cheese. Could probably even use cottage cheese.
