It sounds like your sausage might contain a lot of carbs. This is often the case: that normally carb-free food is given big amounts of sugar to make the public buy it. You have to read labels carefully, and really aim for 20 net grams. When you eat to satiety, prefer zero carb foods first, like greens and some cheeses. Leave foods with carbs, like fruit, to last if you have them at all. If you have a sweet tooth, find foods that are artificially sweetened. You can enjoy sweet food in ketosis this way.
